Very Orange Soup—Vitamix—Vegan

Ingredients for Very Orange Soup

I always called this the Very Orange Soup. When Mac wants me to make this he asks for the Very Orange Soup. So here it is, the VOS! It was one of the first raw vegan soups I learned to make in the Vitamix, and still a favorite. You may either cook the sweet potato, or not…usually I don’t. This is a soup you can rough chop ahead of time, place in the refrigerator…separate the spices into another dish, set aside, and when you’re ready to make this, just toss all ingredients into the Vitamix, run the machine on high for three minutes to heat it to perfection.

The Ingredient List 

This Recipe Yields about 24 ounces (3 cups), depending on the size produce you use. Serves 2.

  • 1 very small Sweet Potato (fist size), peel and rough chop. You may cook it, or not. It doesn’t matter.
  • 1/2 cup chopped Carrot (about a medium size carrot)
  • 1 cup Orange Bell Pepper, toss out seeds, and rough chop (1 small bell pepper)
  • 1 Orange, zest for 1 teaspoon of zest, and squeezed to about 1/2 cup of juice (1 orange = about 1/2 cup)
  • 1 tablespoon Sweet Onion, minced
  • 1/2 cup Almond Milk
  • 1/2 teaspoon Sea Salt (See Miso Option below)
  • 1/8 teaspoon Pepper
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Cardamom
  • 1 tablespoon Honey or Maple Syrup
  • Optional Ingredient: 1 tablespoon Sweet White Miso, or Mellow White Miso.  Miso is an excellent addition to this type of soup. I use a brand called Miso Masters, available at Natural Grocer, Whole Foods, and Central Market. If you use Miso, cut the sea salt back to 1/4 teaspoon.

The Preparation Method

  • If you want to cook the sweet potato, do that. If not peel and rough chop the sweet potato and carrots.
  • Add all ingredients into the Vitamix. When fully liquidized, run on High Speed for about four minutes.
  • Adjust seasonings and thickness to your preference.

Personal Note: If you don’t have a high speed blender that heats, blend in a traditional blender, and heat in a pan. Stir and watch closely. Do not bring to a boil, but just under the boil point.
